Freeze-drying is an incredible way to preserve food, but one of the biggest questions beginners have is: How long does it actually take? The answer depends on several factors, including the type of food, the machine you’re using, and even your environment.
On average, a complete freeze-drying cycle takes anywhere from 20 to 60 hours, though some foods can take longer. Here’s a general breakdown:
1️⃣ Freezing Phase (9–12 hours) – The machine rapidly freezes the food to temperatures around -40°F.
2️⃣ Primary Drying Phase (10–20 hours) – A vacuum removes about 95% of the moisture from the food.
3️⃣ Secondary Drying Phase (2–15 hours) – The machine removes any remaining moisture to prevent spoilage.
Food Type – High-water foods like watermelon take longer than low-water foods like bread.
Slice Thickness – Thinner slices dry faster.
Machine Size & Power – Larger machines handle more food but may take longer.
Humidity & Temperature – High humidity can slow down drying.
Since the process can take a few days, it’s best to plan ahead. All freeze dryers allow you to start a batch in the evening and let it run overnight. You can also save time by pre-freezing your items in a deep freezer so they’re ready to go when you load them into the freeze dryer.
