Freeze-drying is an innovative method of preserving food that involves removing moisture from it in a way that maintains its structure, flavor, and nutrients. Freeze-drying is a three-step process:
Freezing – The food is first frozen to a very low temperature, which helps retain its shape and structure.
Vacuuming – Once frozen, the food is placed in a vacuum chamber. The pressure is reduced, causing the ice in the food to sublimate – meaning it turns directly from ice to vapor, bypassing the liquid phase.
Drying – The vapor is then removed from the chamber, leaving behind dry food. The result is a lightweight, shelf-stable food that retains much of its original nutrients, flavor, and texture.
A home freeze dryer is an appliance about the size of a dishwasher. It consists of a chamber where the food is placed on trays, a powerful vacuum pump to remove moisture, and a control system that manages the freezing and drying process. While they’re larger than a typical kitchen gadget, many home users find space for them in their pantry, garage, or utility room.
